Dried fruit is at risk for mycotoxins such as aflatoxin and ochratoxin A which may be present in the fresh fruit counterpart prior to drying. EU countries enforce maximum allowable limits for dried fruits at levels as low as 5 parts per billion (ppb) for aflatoxin B1 and 10 ppb for ochratoxin A.
