Ochratoxin A is the toxic byproduct of Aspergillus and Penicillium molds found in cocoa, cerealgrains, coffee, soy, wine, spices, dried fruit, and other food and agricultural products. Known to cause immune suppression, kidney damage and classified as a probable carcinogen by the InternationalAgency for Research on Cancer (IARC), ochratoxin A is strictly regulated by Maximum Allowable Levels in domestic and imported food and agricultural products across multiple trade regions.
